Simon Bajada is an Australian food and lifestyle photographer who relocated to Stockholm in 2012 with his Swedish wife, Linda.  Here, surrounded by completely new and different seasonal produce, Simon developed a great interest in Scandinavian cuisine – a passion which has culminated in a new book authored and photographed by Simon entitled The New Nordic, published by Hardie Grant, and out this month.

Wendy Whiteley's Secret Garden in Lavendar Bay, Sydney

Today Georgina Reid of The Planthunter introduces an iconic Sydney garden which should need no introduction.  This incredible space is the creation of Wendy Whiteley, artist and wife to the late Brett Whiteley.

Once a disused railway dump out the front of her Lavender Bay home, this plot of land, owned by the NSW State Government, has been transformed by Wendy and her two gardeners over the past 20+ years.

Up until recently, the garden’s long term future was uncertain, but just this month, the NSW State Government granted the North Sydney Council a 30 year lease for the garden (with an option of a second 30-year period).  A huge win for Sydney residents, visitors and garden lovers alike!

Apple season is here, so celebrate with these tasty alive recipes featuring the forbidden fruit.

Along with colourful, falling leaves and bulbous pumpkins, ripe, crisp, juicy apples tell us that fall is finally here.  With names such as Pink Lady, Gala, Fuji, Spartan, and Golden Delicious, there’s a Canadian apple variety for all of your apple pie, apple butter, or applesauce needs.

An apple a day
As well as being just plain delicious, apples have great nutritional value. They contain high levels of dietary fibre, particularly pectin, which seems to bind to substances in the digestive tract and add bulk. Research has shown pectin to lower total and LDL (bad) cholesterol levels while leaving HDL (good) cholesterol levels unchanged. Further, apples are packed with free radical-fighting vitamin C—in fact, one medium apple contains 10 percent of our daily recommended intake (take that, oranges!).

Apple uses
When it comes to cooking with apples, not all varieties can be used interchangeably. The following will help you determine what to do with your locally picked apples.

  • Applesauce: Braeburn, Cortland, Jonagold, Jonathon, McIntosh, Newtown
  • Apple pie: Cortland, Jonagold, Newtown
  • Baking: Fuji, Granny Smith, McIntosh
  • Cider: Gala, Newtown, McIntosh
  • Dried: Gala
